This week we are putting the spotlight on one of our favorite dishes; our Sautéed Local Black Cod. This dish is so flavorful and our mouths water whenever we get a chance to savor it. Our executive Chef, Aaron Zimmer, adds unique touches to the plate to bring out the flavors, like cooked sugar snap peas, rissole potatoes, French breakfast radishes and onion soubise.

Black cod is fatty while the sugar snap peas have a light char with preserved lemon rinds, and the onion soubise is sweet and buttery which makes this dish rich with just the right amount of sweetness. The overall flavors are fairly delicate so to get the full effect of this dish, our expert beverage team recommends pairing it with a light oak wine with good acidity like St. Clement Chardonnay.
